Homemade Soba Noodles at Hosokawa

Edo Soba Hosokawa is famous for its soba and it is considered the place to go for soba in Ryogoku. It is also known for being listed in the Michelin Guide every year. The owner, Takashi Hosokawa, has been attracting many food lovers with his insistence on serving only what he considers truly delicious, from the soba to the tempura and sake.

Enjoy the flavor of freshly ground soba

Simple seiro soba; fully enjoy the flavor of soba noodles.

This time, the staff of The Gate Hotel Ryogoku tried seiro, which is the origin and the pinnacle of buckwheat noodles.

The soba noodles, made with the special care of the owner, who is called a master, are thick and very firm, and you can sense the aroma of the soba noodles as you bite into them. The owner carefully selects and purchases brown buckwheat from all over Japan, including Ibaraki, Hokkaido, and Shikoku, and stores them at a low temperature. The next morning, he mills only the necessary amount of buckwheat to provide you with freshly ground, freshly beaten, and freshly boiled buckwheat noodles.

Two types of soba are made in different regions, and those who order another batch of soba will be served soba noodles from different regions. It is evident that they have a craftsmanship that does not allow any compromise when it comes to serving delicious soba.

Beyond Only Soba

The spirit of the chef who “only serves flavors he is satisfied with” is not limited to soba noodles. It continues on to anything served in the restaurant. I also had the popular conger eel tempura, which was crispy and fluffy and really delicious.

The soba water is thick and rich. This alone is like a single dish.

I have never seen soba water this thick anywhere else; it tastes just like soba noodles. This water gives you a feeling of relief and calmness in your stomach after a meal.

How to make sure you get a table

Reservations are not accepted, so there is a long line before the restaurant opens for lunch. Also, the restaurant closes when it runs out of soba noodles. If you want to be sure to enjoy your meal, we recommend that you arrive early. In addition, customers under elementary school age are not allowed to enter the restaurant.

Access to the store

It is a 7-minute walk from The Gate Hotel Ryogoku. If coming by train, it is a 7-minute walk from the East Exit of Ryogoku Station on the JR Sobu Line or a 2-minute walk from Exit A3 of Ryogoku Station on the Toei Oedo Line. The store is located in an alley off Hokusai-dori, and is a wonderful hideout.
