Hello, this is the staff of The Gate Hotel Tokyo. Today we are going to introduce Patisserie Parola, a specialty sweet store located in Hibiya OKUROJI situated under the elevated brick arch that runs from Yurakucho Station to Shimbashi Station.
The special canelé your tastebuds will never forget.
The Gate Hotel Tokyo staff members and visitors alike are also fans of their special canelé. Their canelés are made with fermented butter from the long-established French butter brand Bordier, and are crispy on the outside and moist on the inside. The moderate sweetness, buttery flavor, and rum aroma are well balanced which makes their canelés so delicious that you can eat many of them without getting tired of the taste. They pair exceptionally well with coffee or tea, or even with alcohol.
What is Bordier butter?
Bordier butter is famous as the highest quality butter in Brittany, where butter is a specialty. It melts in the mouth and has the sweetness paired with an aroma of milk, making it the butter of choice for three-star restaurants and first-class hotels in France. In fact, the hometown of Alexis Parola, chef-pastry chef of Patisserie Parola, is in Brittany, the same region where Bordier butter is produced. After an enthusiastic offer by Alexis, the collaboration between Patisserie Parola and Bordier butter was created.
Bordier butter is still hard to find in Japan, but it is now available for breakfast at The Gate Hotel Tokyo. We recommend dipping freshly baked croissants generously with our hotel’s special orange spread.

The white-colored restaurant has a large marble counter with 12 seats. The French chef patissier Alexis Parola, who has trained at many famous restaurants, prepares desserts in front of you, creating an exquisite experience.
Be sure to make a reservation for PAROLA’s Plated Dessert Course ￥3,080- (tax included), which includes two types of desserts and a sommelier-selected wine or non-alcoholic paired beverage.
The restaurant is a 4-minute walk from The Gate Hotel Tokyo, or a 6-minute walk from either Ginza or Hibiya station when coming by train. After a blissful dessert time, you will be tempted to buy some exquisite canelés to enjoy them in the comfort of your room.
